Apples are the most commonly produced fruit in Hungary, but the area of orchards is rapidly decreasing and the purchase price is so low that Hungarian apple farmers can barely afford to maintain their farms. I sought a solution to this problem with a winery that processes fruit bought directly from local producers at a fair price. To make this a model project, the cidery I designed is open to visitors and those interested in learning the trade, so I have turned the on-site granary and the enclosed courtyard of the buildings into a venue and garden, which also serves as a showcase orchard for modern rainwater management and permaculture farming.
